Yes, this is a lengthy title we’ve got going on for our recipe for Oatmeal Cookies with Bananas Cranberries & Walnuts. And, it’s true, some folks may prefer to skip the nuts. But we very intentionally included walnuts. So even when naming this recipe, we chose to keep the nuts. These plant-based, oil-free, and gluten-free oatmeal cookies with bananas, cranberries, and walnuts are taste exceptional—and they’re easy to make, too!  They’re chewy, naturally sweet, crunchy, and even nutritious—that’s right; healthy cookies!  Be sure to check out the nutritional information located below the recipe. Instructions

  1. First, line a baking sheet with a sheet of parchment paper or a nonstick baking mat — Preheat the oven to 350ºF.
  2. Then, in a mixing bowl, mash the banana until it becomes a bit creamy but still has a few smallish chunks.
  3. Next, add the vanilla, salt, cardamom, cinnamon, maple syrup, and coconut sugar to the mashed banana and stir.
  4. And now, add the oats, cranberries, and walnuts to the mashed banana mixture and stir until combined.  The mixture will likely appear a bit crumbly - no worries.
  5. Now,  using a teaspoon, generously scoop the oat mixture and then, using your hands, gently shape each scoop into a ball and place on the prepared pan about a couple of inches apart.   Once you've portioned out the cookies, go back and gently pressing the top of each cookie lightly with two fingers to flatten slightly while also doing what you have to do to keep the circle shape intact.  
  6. And last but not least, bake your lovely little cookies for about 15 minutes or until you notice just a bit of browning.  Be sure not to overbake... the browning should be barely noticeable.   Allow the cookies to cool for a minute or two if you can stand to wait, and then, enjoy!  

Notes

  • If you prefer, you could use chopped Medjool dates or date paste to replace one or both of the sweeteners we use in this recipe.  You could also opt to reduce the amount of sweetener overall if you like.  Since we wanted these cookies to fit in with holiday-type cookies without a hitch, we chose to make them with a mindful amount of sweetness.   Just in case you go through dates like nobodies business as we do, we found this terrific price on a 15-pound bulk purchase of organic Medjool dates.
  • We also found this terrific bargain on a 3-pound bulk buy of organic walnuts.

  • I would love to make these cookies but two ripe bananas is a little vague for me. I would love to know how many ounces or grams so the cookies will come out consistent. Could you weigh your bananas and give us that information please. Thank you in advance

    1. Thank you for the suggestion of weighing the ripe bananas, Henrietta, that’s a great idea. However, this is a very forgiving recipe. If your batter is too dry to hold its shape, add a bit more banana, and if it’s too moist, add a few more oats.

  • Would love to try these but I’m out of bananas. Could you substitute applesauce for the bananas?

    1. Great timing, Kristine – Mike and I have been trying all sorts of new recipes for apples.
      I would think that you could use applesauce in the place of the bananas or even just a bit of chopped apple, including the peeling.
      But since I haven’t tried it yet myself, I cannot promise apples or applesauce will work out exactly as the recipe intends, but I sure think it could turn out beautifully – so great timing and thinking!

  • Best banana oatmeal cookies. I use a little monk sugar and 2 Tbsp date paste. Hardly made it to the table because family loved the taste. I didn’t have cardamom. It’s a keeper!
